Adelle & Cesca’s Apple & Cinnamon Cake

A springy, moist and easy to make dessert.

  • 1 egg
  • 1/3 cup sugar
  • 1 cup flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1/2 cup milk
  • 1 cup quick-cooking rolled oats
  • ¼ cup vegetable oil
  • 2 large apple, peeled, cored, and sliced

Preheat oven to 375 degrees.  In mixing bowl, use electric mixer to beat egg and sugar together for 1 minute.  In another small bowl stir together flour, baking powder, and salt.  Add half of this to the egg mixture and beat well.  Add ¼ cup of the milk and beat.  Add remaining flour and the rest of the milk; beat for about 1 minute.  Stir in oats and oil and mix well.  Spread half the batter into prepared pan.  Arrange apple slices evenly on top of the batter.  Spread remaining batter on top.

  • TOPPING
  • ¼ cup sugar
  • ½ teaspoon cinnamon
  • 2 tablespoons butter

Combine all ingredients and mix well with fingers.  Sprinkle over batter.  Bake 25-30 minutes.  Cake is done when it spring back when lightly touched.  Cool 10 minutes and serve warm.
