Christine’s Amazing Amazake Lemon Pudding

Tastes like the filling for Lemon Meringe Pie and it has no sugar!

2 cups amazake drink (plain or flavored –pecan or almond–is OK)

3 T kuzu  diluted in 3-4 T water

Grated lemon peel, about 1/2 teaspoon

juice of 1/2 to 1 lemon (depending on your like of tartness)

( optional 1 T brown rice syrup)

lemon slices for garnish and 4 parsley leaves

Stir amazake and diluted kuzu into a pot. Slowly add lemon juice (and  1 T  of brown rice syrup, if you want) and bring mixture to a boil, stirring constantly  to prevent lumping.  Simmer several minutes.  Add grated lemon rind.  Stir.  Pour into 4- small glass pudding bowls.  Cool. Garnish each bowl with a thin lemon slice and parsley leaf.
